From the message of a friend of ours who told us about a pairing he did with a wine from Tenuta Le Velette, we decided to create a column called Pairing. We then gathered ideas from the family recipe books and from our experiences, and this is how this column came into being, which over time we would like to add to with other recipes of ours and, we hope, of yours that go well with one of our wines.
