Gaudio is the successful result of the synergy between non-native grape varieties and the potentialities of the territory.
A variety originating farther north, Merlot has intrigued us since the early 1990s, with our idea of encapsulating the power of our summer sun in a rich, soft, cozy glass of wine.
The long, healthy maturation we seek makes it an ideal witness of the eclectic nature of our region when we seek to create expressions of surprising richness.
With an intense and rich ruby red color, it opens in the glass in an ample aromatic bouquet, with sensations ranging from cherry to blackberry, from cocoa to tobacco and leather. In the mouth it is full and enveloping, with a good balance between tannic sensations and softness that opens up to an powerful radiance.
CHARACTERISTICS
Soil: Volcanic origin, hilly, at 300 m elevation, southwest exposure.
Grape variety: Merlot
Vineyard age: 10 to 21 years
Density: 3500-4000 vines per hectare
Yield: 6000 kg per hectare, 5000kg per hectareafter thinning
Training system: Rammed cordon
VINIFICATION
Harvesting is done in the first ten days of September.Fermentation in cement vats at 28°C for 7-9 days, followed by a short rest before malolactic fermentation. Matured for 13-16 months in partly French and partly American oak barriques, refining its aromas and color, beforeresting for another 3-4 months in the tank. After almost two years from harvesting, it is ready to be bottled, but it will become available to consumers only after having reached the right softness with a further year of aging in the bottle.
PAIRINGS
It goes wonderfully with roast beef and lamb and in general with more or less rich, substantial dishes. Also excellent with aged cheeses. Recommended serving temperature 20°C.
