RISOTTO WITH ACCORDO
INGREDIENTS:
• 320 g rice;
• 1 cup of Accordo;
• 30 g freshly grated Parmesan cheese;
• 1 liter of broth;
• 1/2 onion;
• 40 g butter;
• salt and pepper.

INGREDIENTS:

Peel the onion, slice it thinly and sauté with 20 g butter in a saucepan over very low heat; add the rice and stir it continuously with a wooden spoon, toasting it in the seasoning.
Add the Accordo, raise the heat and, when all the wine has evaporated, continue cooking the rice adding the boiling broth one ladleful at a time. When the rice is done, stir in the remaining butter and the Parmesan, seasoning with ground pepper.
